Meringue Kisses

2 egg whites
8 tablespoons sugar
1 teaspoon vanilla (or other flavored extract)
Parchment paper ~ OR ~ brown paper bag cut to fit cookie sheet
Optional - food coloring

Beat egg whites until VERY stiff and dry.
Slowly beat in sugar until it holds its shape.
Slowly beat in vanilla.
Beat in food color if desired.
Drop in little dollops onto cookie sheet covered with paper.
Cook at 2oo degrees F for 50 minutes. If needed, turn off oven and let coast.
Meringues should puff up larger and be light and airy in the middle.
